VEGETABLE UPPUMA

Ingredients
  • 1 cup Semolina
  • 2, chopped Tomato
  • 1 Onion
  • ½ cup Green peas
  • ¼ cup Cauliflower florets
  • ¼ tbsp grated carrot
  • 2, sliced Green
  • ¼ teaspoon Mustard seeds
  • ¼ teaspoon Urad dal
  • ¼ teaspoon Chana dal
  • 4-5 curry leaves
  • 1tbsp oil
  • 2 cups Water
  • Grated coconut for garnishing
  • Salt to taste

Method

  1. Roast the semolina till brown.
  2. seperately boil the cauliflower, peas and carrot.
  3. Heat the oil, add the mustard seeds, chana dal, and urad dal and curry leaves.
  4. Fry the onions till transparent and fry the tomatoes till the oil floats on top.
  5. Add the boiled vegetables, salt and water.
  6. When the water begins to boil, gradually add the roasted semolina, stirring constantly.
    Garnish with grated coconut and serve hot.
